Ground Orange Chicken (Paleo, Whole30)

  • And, it is kid-approved and freezer-friendly! This dish has won over even my picky eater and was devoured. Plus, it freezes great, making it perfect for meal prep as well.
  • Finally, it’s a budget-friendly meal! The ingredients are all ones I can find at my local Walmart. AND, if boneless skinless chicken breast is cheaper than ground chicken, then you can make your own ground chicken at home in 5 minutes with a food processor. 

Ingredients

  • Olive or avocado oil
  • Ground chicken – If boneless skinless chicken breast is cheaper than ground chicken, then you can make your own ground chicken at home in 5 minutes with a food processor. 
  • Salt + Pepper – Traditional table salt and ground black pepper.
  • Orange juice – Use a 100% juice orange juice.
  • Coconut aminos – On Whole30 or Paleo, soy is prohibited, as is soy sauce. However, coconut aminos are a great replacement for soy sauce and add a great depth of flavor. We find coconut aminos at Walmart or Trader Joe’s. 
  • Dates – Dates add sweetness to the sauce. I blend them into a date paste first, as that helps them mix in more smoothly. I use pitted medjool dates, which I find in the Winco bulk bins, or at Walmart.

  • Arrowroot or potato starch or flour – These flours are a Whole30 and Paleo way to thicken a sauce like cornstarch. I find them in the bulk bins at Winco. They are also available on Amazon, here and here. Tapioca flour will NOT work the same, as it makes the sauce tacky. Learn more about the differences between Paleo flours here. 
  • Minced garlic – Fresh minced garlic to add a depth of flavor. I buy my garlic pre-minced, like this one at Walmart. 
  • Crushed red pepper – You can find this in the spice aisle of most grocery stores, like this one at Walmart. Optional – if your crew doesn’t like any kind of heat, you can decrease it or leave it out. RIght now it is a medium heat level.
  • Cauliflower rice (Whole30, Paleo) or Rice (gluten-free), to serve – We love this Ground Orange Chicken on top of steamed riced cauliflower, to keep it Whole30 and Paleo. It’s also delicious on cooked rice of your choice, if you just need a gluten-free option.

Instructions

  • In a large saucepan, heat the oil over medium heat until hot. Add ground chicken, season with salt and pepper, and cook until cooked through with no pink, about 10 minutes.
  • While chicken is cooking, whisk together all other ingredients (except the caulirice or rice) in a medium bowl. Steam caulirice or rice.
  • Once chicken is cooked, add sauce to the pan. Cook until sauce thickens, about 5 minutes. 
  • Serve Ground Orange Chicken on top of the caulirice or rice.
  • Store leftovers in a sealed container for up to 1 week in the fridge or 3 months in the freezer.
